Freezing egg yolks

Check eggs for freshness! When working with about 8 yolks, beat them first in 1/4 tsp salt or 3 tsp sugar, pour the mix in ice cube trays and place them in the freezer. This extra care will prevent yolk from becoming too gelatinous when frozen. Do not forget to label the trays!
