Freezing egg whites

Check eggs for freshness! Break and separate them, making sure that no yolk gets in the whites. Pour whites in ice cube trays and place them in the freezer. Whites can be defrosted right in the pan for scrambled or omelets. Allow them to sit at room temperature for about 30 minutes, after thawed, to get more volume when beating.
